Summary: "A Must-Have Cookbook for Any Kitchen"
I initially purchased this cookbook for myself, but now that I've tried a number of the recipes, I've bought copies for all my family and friends. My favorite recipe is the Pumpkin Spice Cake with Cream Cheese Frosting, but the Basil Jalapeno Mojito Sorbet comes in a close second. I actually went out and bought an ice cream machine just so I could make it! This cookbook really showcases the flavors of Colorado Springs, and is an addition to your kitchen that is both beautiful and functional.

Summary: "I LOVE this book!"
This is a beautiful cookbook and the recipes are great! It has good variety and so far everything we've tried has turned out to be very yummy. I like that the baked items give an option of high altitude or sea level baking instructions. I'm very happy with this purchase.

Summary: "Excellent recipes with Colorado flavor"
A Peak at the Springs includes a wide variety of recipes for the most discriminating of tastes. Recipes include the very simple and the very sophisticated, and are the creations of local restaurant chefs as well as Junior League members. Many recipes include Colorado ingredients, and the book features gorgeous photos of the Colorado Springs area. My family loves the white chicken chili (a monthly staple in our house), the buttery dijon ham rolls (SO easy yet so tasty), the lamb stew over couscous, the artichoke dip, and so many others. This has become a go-to cookbook in our house since everything we've tried is delicious. AND, proceeds from the sales of the book go to a good cause. What more can you ask for?

Summary: "Another great Junior League Cookbook!"
This cookbook has beautiful photography of Pikes Peak, Garden of the Gods and other local Colorado Springs attractions, so besides being a cookbook, it's kind of a local pictorial tour of the city. There are recipes from several of Colorado Springs' favorite chefs/restaurants. I really like that many of the recipes feature local Colorado ingredients and baking recipes that work at high altitude!!! Some of my favorite recipes are: Smoked Salmon Brie en Croute, Spicy Sesame Hot Wings, Zucchini and Watercress Soup, Colorado Microbrew and Cheddar Cheese Soup, Grilled Pork Tenderloin with Apricot Brandy Sauce, Pan Roasted Breast of Pheasant with Vanilla and Pears, Wild Mushroom Crepes , Olathe Corn Soufflé, Stacked Basil Potatoes, Basil Jalapeno Mojito Sorbet, Double Chocolate Zucchini Bread and Palisade Peaches Foster. Another thing I like is that this cookbook raises money to support a great cause.
